Ingredients
- 2 Cups of white rice
- 1 Can (16oz) Pink Beans
- 3 tbsp of DMJ Sofrito
- 1 tbsp of salt (use 1/2 for low sodium diet)
- 1 tsp of black pepper
- 1/2 tbsp vinegar
- 2 tbsp of coconut oil
- 2 tbsp of tomato paste
- 3 dry bay leaves
- 3 Cups of water
Directions
In a non-stick saucepan over medium heat, add coconut oil, DMJ Sofrito, salt, pepper, and vinegar. Sauté for 3 minutes. Add tomato paste to the pan and stir. Drain the pink beans, removing excess liquid, and add them to the pan along with two cups of water and bay leaves. Bring to a boil. Wash the rice and drain well. Add the rice to the pan, stir, and cover. Cook for 10 minutes until the rice absorbs the water. Stir again, cover, and continue cooking for an additional 10 minutes over low heat. Once the rice is cooked and has absorbed the flavors, remove the bay leaves.
