Ingredients
- 4 flounder fillets
- 2 tbsp of DMJ Sofrito
- 1 can (16oz) coconut milk, 1/2 tsp of salt
- 1 tsp of black pepper,
- 1/4 tsp ground turmeric
- 2 tbsp of coconut oil, 1 tbsp of tomato sauce
- 1/2 red pepper cut In stripes,
- cilantro for garnishing (optional)
Directions
Clean and season the fish with salt and pepper.
Add the oil and sofrito into a deep fry pan at medium heat and stir. Cook for 3 minutes.
Add the turmeric, tomato sauce, the coconut milk and stir. Let it seem for 5 minutes. Lower the heat and add the fish fillets.
Pour the sauce over with a spoon to ensure the fish is covered. Cover the pan and cook at medium heat for 5 minutes.
Remove from heat. Serve with white rice, Moro, Mashed potatoes, Fried green plantain, or your favorite side dish.
